Perky Cocoa Bark
What you need:
1 ½ tbsp Palmyra Jaggery, or coconut sugar
1 c cocoa butter wafers
½ c Perky Original or Collagen Powder
½ c coconut butter
1/8-1/4 tsp ea. powdered ginger, cardamom, cinnamon, nutmeg, and cayenne pepper
Black sesame seeds and bee pollen to garnish or goji berries, golden berries etc.
Pinch of salt or to taste
Putting it together:
Prep a sheet pan or any square pan with parchment paper (this will go in the freezer). In a double broiler add cocoa butter wafers, and coconut butter and let them melt completely. Next, ad in the dry spices, salt, Perky Powder and Palmyra Jaggery or coconut sugar and stir until combined. Pour melted mixture in pan onto the parchment lined pan, put in freezer for 3-4 mins. Then take out and garnish with sesame and bee pollen then put back in the freezer until completely hard. Take it out and with a sharp knife, break up the bark into chunks. Keep in freezer or fridge for up to 2 weeks.
