Perky Green Lentil Dish

Great for those looking for a different take on this classic Indian dish.

½ yellow onion chopped
2 cloves of garlic minced
1 tbsp Avocado oil
½ c Perky Powder
3 c cooked green lentils
½ c full fat coconut milk
1 c veg stock
2 tbsp coconut aminos
1 tsp salt
1/8 tsp black pepper
¼ to ½ tsp red chili flake (this will give them a kick)

How to prepare:
Saute onion and garlic 2-3 min. with avocado oil, add in cooked lentils and saute for another 2-3 min., add in remaining ingredients and simmer for 15-20 mins on low heat covered.

Eat them up!!
To make a Perky lentil bowl add cooked rice or quinoa on the bottom of the bowl add warm lentils on top, and greens, shredded cabbage and avocado.

NOTE: We soaked our lentils for 24 hrs. rinsed well and par cooked them with seaweed to take some of the gassiness out of them. Once they were par cooked (firm but semi cooked through) we then used them in our Pek’d up lentil recipe.

Add a piece of grilled wild salmon on top and a citrus slaw to garnish.
