Perky Peasant Rice

½ c soaked white or brown jasmine rice

½ c ea. organic frozen peas, corn, and carrots (or the frozen blend of all three)

1 ½ tbsp coconut butter

½ tsp salt

⅓ c Perky Powder (pro or original)

1 ½ c stock of your choice

Garnish: pickled red onion or black sesame seeds

How to prepare:

In a saucepan add stock, rice and salt, Bring to a mild boil then reduce heat and simmer until almost all of the liquid is absorbed and rice is tender. Next, add Perky Powder and stir until blended into rice, then add coconut butter until melted. Peas, carrots and corn can be added next stir until evenly distributed then pull off heat and cover for 5 min.

Serve as a side dish or add a piece of protein on top of the rice for a meal.

Hot Tips: Make sure before adding Perky Powder that not all the liquid is absorbed and it will blend better.

Pickeled Red Onions • INGREDIENTS:

1 red onion, thinly sliced (use a mandoline if you have one)

½ cup apple cider vinegar

1 tbl granulated sugar (you can use less if you choose)

1 ½ teaspoons salt

1 cup hot or warm water

Slice the red onions as thin as you can. I use a mandoline. Stuff all the red onions in the jar of your choice. A bowl will work too. In a measuring cup, combine apple cider vinegar, salt, sugar, and warm water. Stir to dissolve the sugar and salt. Pour this pickling mixture over your sliced onions and let them set for an hour. After an hour, cover and store in the fridge for up to three weeks.
