Vegan Chocolate Truffles
¾ c cashew butter (works best, but any nut butter will do)
½ c agave or other sweetener
½ tsp vanilla
¼ c water
Pinch of salt
1/3 c grated cocao butter melted
1/3 c cocoa powder
Blend all ingredients except for cocoa butter and cocao powder in blender on a low speed until smooth. Stream in melted cacoa and cocao powder to blender. Do not overblend or overheat the mixture once cocoa products have been added, or mixture will separate.
Place in a pan in the refrigerator to firm. Next: Roll in to individual balls and chill until ready to serve.
After rolling into balls, roll in topping of choice (chopped nuts, coconut, different superfood powders like Perky Powder, pomegranate juice powder, green tea matcha, lemon peel)
